Apple Spice Cake with Cinnamon Almond Streusel Topping

This delicious dessert not only is moist and flavorful, but it is also full of healthy ingredients. From whole wheat flour and cinnamon to rolled oats and cloves, you needn’t feel guilty about going back for seconds! And it’s also low-fat: apple sauce replaces butter; and there’s no egg yolk. In addition, maple syrup, a sugar substitute, provides a richness and wonderful flavor. Serve with milk, tea, coffee or plain!

  • 2 1/4 cups minus 2 tbsp whole wheat flour
  • 1 tspn salt
  • 1.5 tspn baking soda
  • 2 tspn baking powder
  • 1.5 tspn cinnamon
  • 1/2 tspn nutmeg
  • 1/2 tspn ground cloves
  • 1 1/3 cups rolled oats
  • 1/3 cup canola oil
  • 1 cup maple syrup*
  • 2/3 cup light corn syrup*
  • 5 egg whites
  • 1.5 cups apple sauce, unsweetened

Topping:
-rolled oats
-chopped almonds
-cinnamon
-brown sugar or raw turbinado sugar

  1. Preheat oven to 350C
  2. Mix dry ingredients in a medium-sized bowl: flour, salt, baking soda, baking power and spices, as well as rolled oats. Set aside.
  3. In a separate large bowl, mix oil, maple syrup and corn syrup for 2-3 min until mixed well.
  4. Add egg whites, beat on high speed for 2-3 minutes until light and fluffy.
  5. Add applesauce and mix well.
  6. Slowly add the dry ingredients.
  7. Coat a 9×13″ pan (or 10″ Bundt pan) with cooking spray.
  8. Pour batter into pan.
  9. Mix topping ingredients in small bowl; spread topping with a spoon evenly over batter.
  10. Bake ~45-50 min or until toothpick inserted in center of cake comes out clean.
  11. Serve with tea, coffee or milk, or on its own.

*Can use 1 3/4 cup maple syrup
