This is a very quick and simple recipe that is chock full of nutrients. Asparagus has many vitamins and minerals including Vitamins A, K, B1, B2 and C, as well as folate, iron and fiber. The health benefits of asparagus range from anti-inflammatory and anti-oxidant properties to cardiovascular health and blood sugar (diabetes) regulation. Both paprika and garlic have anti-cancer and anti-inflammatory properties (among many other benefits which will be discussed in the “Spices” category of the blog). Happy cooking! - 1 pound of asparagus
- 1 teaspoon of extra-virgin olive oil
- ¼ teaspoon of freshly ground black pepper
- ¼ teaspoon of ground paprika
- ¼ teaspoon of ground garlic powder
- 2 tablespoons of grated parmesan
- 1/8 teaspoon of chili powder (optional)
- Preheat oven to 475F; place oven rack at top half of oven.
- Boil water in saucepan; place steamer insert into pan.
- Add asparagus to saucepan; cover and steam until just tender (~3 minutes)
- Transfer asparagus from saucepan to baking pan, lined with foil.
- Coat asparagus with olive oil. Roll asparagus to ensure well-coated with olive oil.
- Sprinkle asparagus with black pepper, paprika, garlic powder, parmesan. For additional ‘kick’,
add chili powder (optional). - Bake in preheated oven for ~5 minutes, or until light brown. No need to turn.
- Serve with brown rice, chicken, turkey or eat as is…very flavorful and of course, healthy!
